Roasted Lime & Olive Oil marinated Sardines

Hello friends,

Greeks love appetizers, but then again who doesn’t.  On Sunday I had planned to make a few appetizers to nibble on before our late lunch.  My husband wanted Sardines, so on Saturday morning, I headed to our local fish store.  I bought a couple of Fresh Sardines.  The cool thing about my fish store is that they can clean (scrape scales) fish. 🙂  This saves me so much time and cleaning up in the kitchen.  

Greek Cuisine has so many different variations of Appetizers that are so tasty.  Sometimes it’s a difficult choice even for me.  For example, when my husband and I are in Greece and go out to dinner to a Tavern they hand us the Menu.  I am very nonchalant chatting away to my husband about well just chatting, I open the Menu and then BOOM!!  what, where, ????!!!  what what what???!!!  then I roll my eyes and I say to my husband here we go again. 🙂 I sit with the Menu in my hand for about 10 minutes trying to decide what appetizers to order.  Seriously, I am not joking!!  ohhhh and I consider myself to be up to date with what they are eating and drinking in Greece.  Buuuut by the time I get to Greece they have come up with new ideas and I am lost!!!

Summertime is definitely for outdoor activities and BBQ, and of course appetizers.  We didn’t bbq over the weekend but I did make a few appetizers and this is one of hubbies favorite…I hope you enjoy it as much as he did…:)

Roasted Lime and Olive Oil Marinated Sardines

A seafood appetizer made with sardines that have been roasted and marinated in lime, oregano and olive oil
Prep Time 5 minutes
Cook Time 30 minutes
Course Appetizer, Dinner, Lunch, Seafood, Side Dish
Cuisine Mediterranean
Servings 4 people

Ingredients
  

  • 20 Fresh Sardines
  • 1 Lime Juice
  • ¼ cup Olive Oil
  • Oregano

Instructions
 

  • Wash Sardines thoroughly and place sardines into a baking pan. Place a sheet of baking paper before adding in the fish
  • Preheat oven to 180 and roast for about 30 minutes. The newer ovens take much less time.. Once the sardines are ready set aside to cool off. In a separate bowl add lime juice, olive oil, and oregano. Pour mixture over sardines and place the sardines in the fridge overnight.
