Heyyy!!
How is everyone? Farfalle Pasta day today!! Love this recipe…Lental and Carrots marinated overnight in Balsamic Vinegar and herbs. I prepared every this recipe late last night and left it to cool…It is just to hot to eat or drink anything hot. This way I had my lunch prepared in advance and gosh did it taste good….:)
This is for Cazzzz if you’re not having a heatwave in the UK can we switchhhhhhhh ???? 🙂 It is hot hot…to the point that I am having such a difficult time concentrating and sleeping. I would prefer being at the beach..after all, it is June but I also have to remember that this a strange Summer. Interestingly enough I was just listening to Taylor Swifts song Cruel Summer hmm. .I noticed that I have a lot of Lady Bugs in my garden. I took a photo of one of these pretty little ladies with my phone. But honestly, my phone does not have a very good camera. I think this one is enjoying my Green Beans. 🙂
I tried very hard to get some sleep but it was impossible. So, I ended up spending most of the evening in the garden and so did Charlie. I think it around 2 when I decided to head on back into the house and try to get a decent night’s sleep. It took me a good hour but I finally fell asleep. I woke up this morning feeling blahhhhh, the first thing I usually do is open up the windows. And there it was a nice cool breeze…ohhh what a relief. It is still hot but at least we have a breeze that makes the heat bearable.

Lental Carrot with Farfalle Pasta Recipe
Ingredients
- 2 cups Lental boiled
- 1 package Pasta
- 2 cups Carrots cubed or sliced
- ½ cup Dill
- ¼ cup Balsamic Vinegar
- 1 tbsp Hot Chili Flakes
- ¼ cup Olive Oil
- 1 Onion (optional) diced
Instructions
- Boil pasta in saltwater.
- Boil Lenta and Carrots. Drain and set aside to cool off.
- In a medium-size bowl add in all the ingredients stir and then place into the fridge to marinate overnight. Garnish over pasta and serve.
