Easy Garlic Frozen Vegetables – with Herbs and Spices

I think we all have a bag of frozen vegetables in our freezer that’s tucked away, waiting for the right moment. The truth is, I haven’t been able to go grocery shopping these past few days, so this was my right moment.  I reached into my freezer and took out my bag of frozen vegetables.

Sometimes, no peeling,  no chopping, is necessary. Just open the bag and toss them straight into soups, stews, pasta dishes, or a simple skillet sauté. For busy days, they’re a lifesaver. One of my favorite ways to use frozen vegetables is in one‑pot meals.  If you’re making a stew, frozen carrots, peas, or green beans blend right in and save you so much prep time. And if you’re cooking for the week, frozen veggies make cooking faster.

The trick is knowing when to add them. For soups and stews, add them during the last 10–15 minutes of cooking so they stay bright and tender. For pasta dishes, stir them in during the final few minutes, so they warm through without turning mushy. And if you’re sautéing, like I did for this recipe, cook them straight from frozen over medium heat so they keep their texture. Frozen vegetables help you build meals that are colorful, nutritious, and full of flavor, even on days when you don’t have time to chop a single onion. 🙂

Easy Garlic Frozen Vegetables

Frozen vegetables become a quick, flavorful side dish when sautéed with olive oil and garlic. The heat brings out their natural sweetness while the garlic adds a warm, aromatic depth.

Cook Time 15 minutes

Ingredients
  

  • 1 package frozen vegetables peas, carrots, corn, broccoli, etc.
  • ¼ cup olive oil
  • 1 tbsp butter unsalted
  • 3 garlic cloves minched
  • dill finely chopped
  • ½ cup vegetable broth
  • 1 tbsp smoked paprika
  • ½ tbsp pepper
  • salt optional

Instructions
 

  • Add the ¼ cup olive oil and the 1 tbsp butter to a pan and cook over medium heat.
  • Place the 1 package frozen vegetables directly into the hot pan in a single layer.
  • Let the vegetables cook until the ice crystals evaporate.
  • Add in the 3 garlic cloves, 1 tbsp smoked paprika and ½ tbsp pepper. Stir gently. Let this cook for 5 minutes.
  • Pour in the ½ cup vegetable broth. Stir and cook until the broth has evaporated.
  • Sprinkle in the fresh dill.
  • Serve
