I can’t remember the last time I was so busy that I forgot to eat. Yesterday, was a very long day, back to back lessons and then Food Photography and Food Styling courses. In between lessons I had to take Charlie out for his walk. I was really looking forward to walking with him because I really needed a change of scenery and the fresh air. 🙂 At some point I realised that I had forgotten to eat!! Yep, I did!!!. It is great to be working again, but I forget that I need to take more breaks.
I went to the kitchen to make lunch, it was already 2:00 pm. I needed to make something very simple and tasty. Me and tasty go together 🙂 I was done for the day but I had some Photography styling courses that I needed to catch up with. This is a simple recipe, love that it is a great Vegetarian dish with great ingredients. (If you like Garlic you can add it to this recipe) very few but believe me, it tastes fantastic! When it was done, I sat in front of the TV to watch Will and Grace. I have missed a few of the latest episodes. 🙂

ROASTED BABY POTATOES AND OLIVES
Ingredients
- 5 Potatoes cut in half
- 1 Onion diced
- 1/2 cup Olive Oil
- Salt & Pepper
- 1/2 cup Olives pitted
- Water
Instructions
- Pre-heat oven at 180.
- Slice potatoes.
- In a bowl add in sliced potatoes, pour oil.
- Continue by adding in the diced onion. Give it a good mix!
- Add the olives.
- Oil brush a baking pan, add in the potato mix, and just enough water to cover the potatoes.
