Are you looking for a One-Pot Recipe? Here is a recipe I think you might like to try out. An Orecchiette Minestrone Soup Recipe made with fresh vegetables. One-pot recipes are so easy, you don’t spend too much time in the kitchen. and the best part of all is that you only need one pot! (I sound like a commercial!!) ok, well I’m on a roll now so I might as well continue with this is not the traditional Minestrone recipe, I have tweaked it with ingredients that I like to use. For example, I added leek to give the soup a sweeter taste instead of adding raw onions. (The rest is on the recipe card below)
But Here’s a tip that you might want to try out in the future. When I am done chopping my veggies I place them into a bowl of ice-cold water. I let the veggies sit for a few minutes and then rinse them thoroughly under running water. Leaving the veggies to sit for a few minutes extracts dirt which then floats to the top. Rinse under running water. (I still sound like a commercial, what in the world!!???)
Here’s a bit of interesting information you may or may not know. There are people who believe that the Orecchietto is shaped similar to a Dome, but others see it as a small Ear? You’ll find the shot in the recipe card below What do you think Dome or Ear? I always thought it looked like a small shaped shell.

One Pot Orecchiette Minestrone Soup Recipe
Ingredients
- 1 leek chopped
- 1 celery stalk chopped
- 2 cups kidney beans
- 2 cups corn
- 1 carrot chopped
- 2 scallions sliced
- 1 red bell pepper diced
- 1 orange bell pepper diced
- 1 zucchini diced
- 1 ½ tbsp tomato paste
- ½ cup olive oil
- dill
- 1 tbsp sugar
- salt and pepper
Instructions
- Chop vegetables and place them into a pot of boiling water with olive oil.
- Add-in kidney beans and corn.
- Add in orecchiette pasta and tomato paste.
- Boil on medium heat for 30 minutes. Garnish with Dill. Serve hot
