One Pot Orecchiette Minestrone Soup Recipe
A warm bowl of soup made with vegetables, beans, and corn and Oreccehette pasta.

- 1 leek chopped
- 1 celery stalk chopped
- 2 cups kidney beans
- 2 cups corn
- 1 carrot chopped
- 2 scallions sliced
- 1 red bell pepper diced
- 1 orange bell pepper diced
- 1 zucchini diced
- 1 ½ tbsp tomato paste
- ½ cup olive oil
- dill
- 1 tbsp sugar
- salt and pepper
Chop vegetables and place them into a pot of boiling water with olive oil.
Add-in kidney beans and corn.
Add in orecchiette pasta and tomato paste.
Boil on medium heat for 30 minutes. Garnish with Dill. Serve hot
