In Greece, tomato sauce isn’t just a pantry staple; it’s part of our cooking wonderland. Every summer, kitchens fill with the smell of tomatoes roasting in olive oil (or in the sun), onions melting into sweetness, and herbs releasing their aroma. This Greek roasted homemade tomato sauce captures that exact feeling: warm, rustic, and absolutely Mediterranean.
Roasting tomatoes is something Greek home cooks have done for generations. (Me included) Instead of simmering everything on the stove, we let the oven do the work. The tomatoes soften and caramelize, the onions turn golden, and the garlic becomes buttery. The olive oil, always extra‑virgin, ties everything together with that unmistakable Greek flavor.
You may be wondering why this sauce tastes so Greek. Cooking is relatively simple: good ingredients (a must), patience (needed), and olive oil (top ingredient). Roasting brings out the tomatoes’ natural sweetness without adding sugar. The onions and garlic roast alongside them, becoming soft and caramelized. So to get started, you will need fresh tomatoes, onions, garlic (you can also use garlic powder), extra‑virgin olive oil, salt, pepper, and a Greek herb. You can add basil for a Mediterranean twist, but oregano keeps it authentically Greek. Spread the tomatoes, onions, and garlic (if you are using fresh garlic) in a baking dish. Drizzle generously with olive oil; don’t be shy, this is Greek cooking.
Roast until everything is soft, glossy, and slightly charred at the edges. Blend it smooth in your blender or food processor, or leave it rustic and chunky. The result is a sauce that’s thick, sweet, and full of roasted flavor. Perfect for pasta, baked chicken, briam, or spooned over grilled vegetables. This sauce stays fresh in the fridge for about 2 weeks.

Greek Roasted Tomato Sauce
Ingredients
- 6 fresh large tomatoes sliced into 6 pieces
- 1 ½ tbsp tomato paste
- 1 red onion sliced
- ½ tbsp garlic powder You can also add minced garlic
- 1 ½ tbsp dry or fresh oregano
- ½ cup ELLIVE Olive Oil
- salt
- pepper
Instructions
- In a medium-sized baking pan, add 6 fresh large tomatoes, 1 ½ tbsp tomato paste, 1 red onion, ½ tbsp garlic powder , 1 ½ tbsp dry or fresh oregano, ½ cup ELLIVE Olive Oil. Toss all the ingredients so that the tomatoes are fully coated.
- Preheat oven to 180℃.
- Sprinkle a little salt and pepper over the mixture, and stir to coat.
- Place the tomatoes into the oven and bake until tender, or until the tomatoes are soft and have a somewhat jam-like texture and most of the liquid has evaporated.
- Transfer the roasted tomatoes to a blender and blend on high until the mixture becomes a thick, smooth sauce.
- Spoon this tomato sauce over your favorite pasta and serve.
