Greek Roasted Tomato Sauce

A sweet, slow‑roasted Greek tomato sauce made with ripe tomatoes, onions, garlic, and extra‑virgin olive oil. Roasting brings out deep Mediterranean flavor: caramelized, rich, and naturally sweet.

- 6 fresh large tomatoes sliced into 6 pieces
- 1 ½ tbsp tomato paste
- 1 red onion sliced
- ½ tbsp garlic powder You can also add minced garlic
- 1 ½ tbsp dry or fresh oregano
- ½ cup ELLIVE Olive Oil
- salt
- pepper
In a medium-sized baking pan, add 6 fresh large tomatoes, 1 ½ tbsp tomato paste, 1 red onion, ½ tbsp garlic powder , 1 ½ tbsp dry or fresh oregano, ½ cup ELLIVE Olive Oil. Toss all the ingredients so that the tomatoes are fully coated.
Preheat oven to 180℃.
Sprinkle a little salt and pepper over the mixture, and stir to coat.
Place the tomatoes into the oven and bake until tender, or until the tomatoes are soft and have a somewhat jam-like texture and most of the liquid has evaporated.
Transfer the roasted tomatoes to a blender and blend on high until the mixture becomes a thick, smooth sauce.
Spoon this tomato sauce over your favorite pasta and serve.
