Hii!!
How is everyone today/afternoon/evening….In my previous post, I mentioned that I did a lot of cooking and that is true. So, this time I am back with another delicious and pretty simple Shrimp, Peppers, and Tomato Sauce recipe. I used Red Bell Peppers this time because I used the leftover Paprika Peppers to make a 3 Cheese Paprika Pepper Quiche. hahhaha WIll be posting that one next week. 🙂
Well, it seems that things are changing, or shall I call this the “New Norm” but we are slowly going back to our lives. It seems that hair salons, nail salons, and all other department stores and smaller stores are opening up again as of next week. Personally, I do need a hair cut but I decided to wait it out, I waited 3 months a few more weeks is not going to bother me. I can still manage my hair….hehehe
I think everyone is happy about this and so am I to be honest. But self-distancing will continue to be a part of our lives for the next few months. And we might also have to accept the fact that we might not be able to go on vacation this year…hubby due to his HA was not able to go back last year so we were hoping that this year we would be able too. But we will see how things will evolve in the next few months.

Penne Pasta with Shrimps, Peppers in Tomato Sauce
Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion diced
- ½ cup olive oil
- 1 ½ cups water
- ½ cup dry white wine
- 4 cups shrimps boiled
- 1 tbsp tomato paste or fresh tomatoes
- ½ cup dill
- salt
- 1 tbsp smoked paprika
- parmesan cheese
Instructions
- Add peppers and onion into a pan....sauté until peppers are soft.
- continue by adding the water, olive oil, and wine.
- add boiled shrimps and dill.
- add the tomato paste, salt, smoked paprika.
- cook until sauce has thickened.
- Garnish with Parmesan cheese.
