This is such a lovely appetizer to make whenever your hungry for something light. It is one of the easiest snacks to make, when you return home from work and not really in the mood to cook, or just having a bit of relaxing time. This also goes along nicely with a cup of hot soup. 🙂
The Greek Dakos/Rusk are quite hard, so to help them soften up before eating, there are two options either drizzle with water or olive oil. My Uncle Nick, use to eat these quite often, and I remember he used to always add water on the rusks to soak through before he added any toppings. I prefer this little trick for this recipe, dice the tomatoes into small pieces and let sit for a while on the rusk, so that it soaks in all the juices from the tomatoes. 🙂

TRADITIONAL CRETAN BARLEY DAKOS WITH FETA CHEESE – TOMATO (RUSK WITH FETA AND TOMATO)
Ingredients
- 2 large Rusks
- 2 Medium Tomatoes diced
- 200 grams of Feta Cheese
- 2 Garlic Cloves diced optional
- 1/3 grams Olive Oil
- Salt
- Oregano
Instructions
- Dice tomatoes into small pieces…add them on top of tomatoes and let the juice flow through the Rusk until soften..I would recommend about 20 minutes.
- Add salt, garlic and 1/2 of the olive oil and top with Feta Cheese and the rest of the olive oil. Sprinkle on Oregano and it is ready to eat.
