Hello there!! I hope that everyone had a lovely Christmas with family and friends. 🙂 My mom is visiting for the holidays. We were up early this morning, had our coffee and went straight for the kitchen. to start baking. Since we only make these cookies one a year we always prepare an extra batch for after Christmas. It never seems to be enough.
The first batch and placed them on my dining table, and by noon my husband had eaten a few more than he should have 🙂 but that’s ok because we are still in the holiday mood. If you love sugar-coated, almond tasty cookies you need to try these cookies!! They are soft and flavored with Cognac and stuffed with baked almonds.
We had finished baking, coating by mid-afternoon and we are done for this year 🙂 Another year is coming to an end in a few days, and for my family and some of my friends it was a difficult one, but this is what life is all about. Ups and Downs and dealing with the obstacles that life throws your way. Right?? I am sure you agree with me 🙂

Snow-covered Greek Christmas Cookies
Ingredients
- 2 cups Butter room temperature
- 1/2 cup Powder Sugar
- 1 shot Cognac
- 1 Egg
- 5 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 3 cup Powder Sugar for coating
- 3/4 cups Almonds chopped
Instructions
- Start off by adding a tablespoon of butter into a sauce pan and melt, add in the almonds stir until golden brown.
- Powder Sugar
- Flour mixed with baking powder
- In a mixing bowl add in the butter and whip until fluffy, continue by adding in the rest of the ingredients.
- Blend all ingredients until well combined. The mix should turn into a soft dough.
- As you can see in the photo my mom shaped the cookies into half moons, and round cookies. Place cookies into baking pan and then into the oven and bake at 180 degrees until golden brown.
- When cookies have baked, coat with powder sugar while they are still hot. The cookies should be fully covered with powder sugar.
