Rustic Red Pepper Dip

Hey there foodie friends,

How is everyone doing? Are you searching for dip recipes?  If you are seeking a smooth-textured kind of dip, well, sorry to disappoint you, but this recipe is not it. This Rustic Red Pepper Dip recipe is chunky textured and full of delicious flavors. Roasted red peppers bring sweetness to this dip, and so does a hint of garlic, which adds a familiar boost in taste.  It’s like a group of loud Greek relatives in one bowl (hahahhaha), flavorful, slightly chaotic, but in the best way.

While I was still living in Greece, weekends meant one thing: road trips. And I don’t mean “let’s plan it out” kind of road trips. I mean the spontaneous “let’s get in the car and figure it out halfway down the highway” type.  Let me clear one thing up, we still take these spontaneous trips with my hubby. 🙂 One of my favorite parts of those little adventures (besides the fresh sea air and beautiful mountain landscapes was tasting all the local dishes, including the dips. Every region had its version, each with a little twist, like this Rustic Red Pepper Dip.

I roasted the peppers in the air fryer, set them aside to cool, and then I stirred in a spoonful of Greek yogurt and crumbled some feta cheese. Surprised?   So, let me explain what the yogurt does. First of all, it adds just enough creaminess without turning this rustic beauty into a smoothie (because nobody wants to dip their bread into a protein shake). Meanwhile, the feta brings its usual bold, salty charm because, let’s face it, it’s feta, and it knows exactly what it’s doing. As for the herbs, I kept things simple with dill (because I truly can’t help myself) and a little touch of parsley. Instead of going wild with the chopping, I just gave them a casual slice here and there. After all, I love seeing pieces of green in every bite.  I’m curious what kind of kitchen utensil do you use to chop your herbs?

Now, I’ve tried a few different takes on this dip over the years. Some added chili flakes (yum), others tossed in olives (ehhh…). One version I had used red wine vinegar-marinated olives, and it ended up tasting like someone accidentally dropped the whole jar in. Way too sour for my taste.  This dip is all about balance.

Serve this Rustic Red Pepper Dip with warm pita bread, crusty bread. And yes, don’t forget the wine. Or maybe a cold beer. Or both, and I added a pinch of spicy pepper flakes, just because.

Rustic Red Pepper Dip

Ingredients
  

  • 5 red peppers roasted and sliced into chunky pieces
  • 1 cup feta cheese crumbled
  • 1 ½ tbsp greek yogurt full fat
  • 2 garlic cloves crushed
  • 3 tbsp fresh dill chopped
  • 2 tbsp fresh parsley chopped
  • ¼ cup olive oil
  • salt
  • pepper
  • pepper flakes pinch (oopitonal)

Instructions
 

  • Pop the peppers into the air fryer and cook at 200℃ for about 5 minutes and just enough time to soften them up and char look.
  • Let them cool off. Slice into chunky pieces.
  • Add all the ingredients into a bowl and gently stir.
  • Serve with your favorite bread or with whatever you have on hand.
