Grilled Greek Pork Souvlaki

Hey there, fellow foodies friends,

If summer in Greece had a scent, it would be the smoky aroma of souvlaki sizzling on a charcoal grill. Take this Grilled Greek Pork Souvlaki recipe for example.  Whether you’re on a beach, in the mountains, or just hanging out on a balcony in the city, souvlaki is the meal. And do you know what the best part is?  It’s so simple to make.  I try to keep things simple, easy, and flavorful when it comes to Greek food recipes, especially during the summertime. No one wants to turn on the oven or spend hours prepping when it’s 35°C or higher outside. That’s why this grilled pork souvlaki is one of my seasonal staples for my meat-loving family and friends.

The first time I ever tried pork souvlaki wasn’t in the States. It was in Greece when I was around 11 years old. We were visiting my grandparents, and one late afternoon, they gathered all the grandkids. My cousins, my mom, and my aunt took us to the local souvlatzidiko in their neighborhood.  I remember the walk clearly. The sun was beginning to set, the air was warm, not warm hotttt, and we were all chatting, laughing, and following the delicious scent of grilled meat through the streets.

That first bite of the tender pork, smoky from the grill, still sizzling as it hit the bread, was everything. Juicy, flavorful, and soaked in fresh lemon juice, it was simple but unforgettable. No fancy presentation, just good food, family, and a moment that’s stayed with me forever.  There was no pita bread back then, thick slices of crusty bread, a bread that was similar to a baguette, and the souvlaki was soaked in plenty of fresh lemon juice. Simple, rustic, and absolutely perfect.

This was way back, many years ago, when I was still eating meat. Though my food choices have changed since then, I still love re-creating the flavors of that day. Now, I turn to fresh veggies, grilled halloumi, and mushrooms. Plant-based options to bring some of those same Greek street food vibes to the table, just with a twist that fits how I eat today.  Because for me, it’s not just about the ingredients, it’s about the feeling, the memory, and the joy of sharing good food with the people you love.

Grilled Greek Pork Souvlaki

Tender pork marinated in olive oil, oregano, and lemon juice.
Prep Time 1 hour 20 minutes
Cook Time 30 minutes

Equipment

  • 6 skewers
  • 1 bowl to marinate

Ingredients
  

  • 600/ grams pork fillet chopped into medium cubes (about 1 lb)
  • ¼ cup olive oil
  • tbsp dry oregano
  • 6 pita breads
  • 1 lemon juice
  • salt
  • pepper
  • 3 tomatoes
  • 2 onions sliced

Instructions
 

  • In a bowl, mix the olive oil, lemon juice, oregano, salt, and pepper. Add the pork pieces and toss to coat. Cover and refrigerate for at least 1 hour.
  • If you're using wooden skewers, like me, soak them in water for 15 minutes.
  • Dip the soaked skewers into the bowl before you start to thread the marinated pork pieces onto the skewers.
  • Grill the souvlaki over medium-high heat for about 30 minutes, turning every few minutes until charred and fully cooked.
  • Brush a little olive oil on both sides of the pita bread and toss it on the grill.
  • Plate with fresh tomatoes and chopped onions, add tzatziki to dip and a slice of lemon. Serve
