Grilled Greek Pork Souvlaki

Tender pork marinated in olive oil, oregano, and lemon juice.

Equipment

  • 6 skewers
  • 1 bowl to marinate

Ingredients
  

  • 600/ grams pork fillet chopped into medium cubes (about 1 lb)
  • ¼ cup olive oil
  • tbsp dry oregano
  • 6 pita breads
  • 1 lemon juice
  • salt
  • pepper
  • 3 tomatoes
  • 2 onions sliced

Instructions
 

  • In a bowl, mix the olive oil, lemon juice, oregano, salt, and pepper. Add the pork pieces and toss to coat. Cover and refrigerate for at least 1 hour.
  • If you're using wooden skewers, like me, soak them in water for 15 minutes.
  • Dip the soaked skewers into the bowl before you start to thread the marinated pork pieces onto the skewers.
  • Grill the souvlaki over medium-high heat for about 30 minutes, turning every few minutes until charred and fully cooked.
  • Brush a little olive oil on both sides of the pita bread and toss it on the grill.
  • Plate with fresh tomatoes and chopped onions, add tzatziki to dip and a slice of lemon. Serve
