Hey everyone….How was the weekend for everyone?? I wasn’t able to do the garden, I had to many other things to do, so this will have to wait again. 🙂 Ok, so I was going to post some Halloween Cookies, but I decided not to because I’m really not that good at the decorating. 🙂 I had borrowed some things from my Pastry Chef friend but after a few tries the cookies looked weird, and I mean seriously weird and so I decided not to continue with the cookie decorations. Buttttt I did promise myself that I will practice on the decorating part, and I will ask my friend to show me a few tricks and tips about decorating cakes, cookies, etc.
So, I decided to go back to cooking that I know I am good at and did the simple yet scrumptious recipe Mushrooms with Feta! Cheese!! 🙂 These Mushrooms have been marinated in wine, got you interested yet??? (I know someone who is because I posted this photo on my Instagram Account hahahahahaha) and roasted with ingredients that just makes this a delicious appetiser or main dish if you love Mushrooms like me. 🙂

Ingredients:
1 1/2 cup Mushrooms (sliced)
1/2 Onion (chopped)
1/4 cup White Wine
1/2 Red Bell Pepper (sliced)
1/2 Green Bell Pepper (sliced)
1 tablespoon Dijon Honey-Mustard
2 tablespoons Olive Oil
Salt (optional)
1/4 cup Feta Cheese
Preparation:
Slice Mushrooms.
Place in a bowl and pour White Wine and marinate for about 15 minutes. If you want a stronger taste marinate for 1 hour.

While the mushrooms are marinating chop and slice the rest of the ingredients. Once Mushrooms are ready add them into a baking pan along with sliced the ingredients, (except for the Feta Cheese) add in the mustard,
and Olive Oil. Use a wooden spoon to blend the mustard and olive oil throughout the mushroom mix. Pre – heat oven to 180 and bake for 1 hour.
Top with Feta Cheese
