Pasta, pasta, and it’s pasta time again! Mediterranean Farfalle with sautéed vegetables has to be one of the easier dishes to prepare. Those little bow ties hold onto sauces beautifully, and when you pair them with fresh vegetables, you get a dish that is colorful (delicious, let’s not forget that!!) and perfect for busy weeknights. This Mediterranean‑style Farfalle recipe is a simple recipe that brings together fresh seasonal produce, good olive oil, and tender pasta.  Ok, I promise I won’t lecture you about the sacred art of olive oil ever again… unless you use the wrong one; then I’ll simply gasp dramatically and faint on the nearest couch. hahahhahahh

This pasta dish is so flexible that you can use any vegetables you have on hand, for example, zucchini, bell peppers, cherry tomatoes, spinach, carrots, or even broccoli. The key is to sauté everything until it becomes soft, sweet, and slightly caramelized. That’s where the flavor really develops.

If you also need a recipe that reheats easily, the vegetables stay vibrant and flavorful.  I prefer going old school when it comes to reheating food.  I don’t have a microwave; I used to, but I decided to give it away many years ago.  You can enjoy it as a main dish or serve it cold as a pasta salad. Add a sprinkle of Parmesan, feta, or even a spoonful of pesto to elevate it even more.

Mediterranean Farfalle with Sautéed Vegetables

Ingredients
  

  • 500 grams farfalle pasta boiled as stated on the package
  • 1 cup green beans optional
  • 1 yellow bell pepper sliced
  • 1 red bell pepper sliced
  • ½ cup black olives pitted and sliced. (optional)
  • 1 onion chopped
  • 2 garlic cloves minced (optional)
  • 5 tbsp olive oil
  • salt
  • pepper

Instructions
 

  • In a large pot, boil the 500 grams farfalle pasta in salted water as stated on the package.
  • In a large pan, heat up the 5 tbsp olive oil, add in the 1 cup green beans , 1 yellow bell pepper, and 1 red bell pepper. Sauté for a few minutes, then add the 2 garlic cloves and the 1 onion. Sauté until all the vegetables are tender.
  • Drain the pasta and add into the vegetables. Gently toss and add the ½ cup black olives.
  • Season with salt and pepper.
  • Serve hot
