Authentic Greek Fasolada

Hello everyone,

It’s the beginning of September, and for me that means one thing: I’m kicking it off with this Authentic Greek Fasolada (White Bean Soup), or as we call it in Greece, Fasolada. Fun fact: Fasolada isn’t just a beloved classic… It’s actually considered Greece’s national soup.   Oh wait, but I think I kicked my soup season off with Lentil soup. 🙂

When I first shared my Fasolada recipe back in 2017, I used a mix of ingredients like peppers, bacon, oregano you name it. This time, I wanted to return to its roots. I prepared it the traditional way, with fresh celery and carrots, and absolutely no bacon. As much as I love tweaking recipes, sometimes the traditional version is exactly what my heart (and taste buds) want.

If you ever find yourself in the Greek villages this time of year, take a slow walk through the narrow streets. The colors are incredible: leaves turning, and the scent of homemade bread drifting through the crisp air. Some of these beautiful areas in Greece are in the Zagori region.  Beautiful little villages tucked away in the mountains.  This region is also a UNESCO heritage site. Then there is Arachova, which is in the western part of Boeotia, with breathtaking Alpine landscapes.  There are incredible little taverns that blow your mind with the food, and Greek Fasolada is first on their menus.

Imagine this: while you are walking around somewhere,  on those little cobblestone streets, from every home or taverna you’ll catch the familiar aroma of Fasolada simmering on the stove and homemade bread.  🙂

So, if it’s chilly in your area, this Authentic Greek Fasolada is definitely the way to go.

Authentic Greek Fasolada

Fasolada is made with white beans, carrots, celery, and plenty of good olive oil, this authentic recipe delivers warmth, flavor, and pure Mediterranean goodness in every spoonful.

Ingredients
  

  • 3 cups white beans soaked in water overnight
  • 2 onions finely chopped
  • 1 carrot large chopped
  • 2 fresh tomatoes finely chopped
  • 1 tbsp tomato paste
  • 1 ½ liter water
  • ½ cup olive oil
  • 1 celery stalk chopped into small pieces
  • salt
  • pepper

Instructions
 

  • In a large bowl add the 3 cups white beans, add just enough water to cover the beans, and soak overnight.
  • Add the 2 onions, 1 carrot, and the 1 celery stalk into a pot. Pour in the ½ cup olive oil and sauté until soft.
  • Drain the beans and add to the sautéd vegetables. Add the 1 ½ liter water and bring to a boil.
  • Toss in the 2 fresh tomatoes, 1 tbsp tomato paste. Cook the beans until they soften completely and the broth reduces into a naturally slightly thick, sauce.
  • Season with salt and pepper.
  • Serve hot with feta cheese.
