Happy Monday to all!! So, I have some exciting news I was asked to take part in a project that involves CSO Italy and the European Union. The project is called Fresh Up your Life! https://www.instagram.com/freshupyourlife.usa So, basically, this project unites Italian producers of fresh Fruits and Vegetables and promotes the culture and quality of European fresh Fruits and Vegetables. A few of the countries that will take part in this project is The US and The UAE by hosting various events. This will be an ongoing project for at least two more years and will end January 2022.
My part in this project is to post a recipe with fruits and or vegetables. So, please find below a delicious #APPLE CAKE WITH HAZELNUTS AND TORTA AMARETTI.
As a food blogger and a Vegetarian, I absolutely must insist that you should if you have not yet to implement Fruits and Vegetables in your daily diet. 🙂
#APPLE CAKE WITH HAZELNUTS AND TORTA AMARETTI
AMARETTI 2 cup
BISCUITS (like Digestive type) 1 cup
TOASTED HAZELNUTS 1 cup
RED APPLES 3 medium
BRANDY 1 shot
BUTTER 3 spoons
BAKING POWDER 1 sachet
SUGAR 3 spoons
1 Chop biscuits. Set aside 2 spoon of biscuits and pour the rest into a bowl. Chop amaretti and hazelnuts. Add to the bowl. Add 1 spoon of sugar, baking powder and stir. Put some butter on a 24 cm cake tin and pour the cookies kept aside.
2 Helping you with thw whips, whip agges with 1 spoon of sugar. Add to the mixture the chopped biscuits, alternating with brandy. Peel apples and cut half into cubes and the other half into wedges. Add cubes to the dough and pour into the cake tin.
3 Place the apple segments on the surface. Sprinkle with sugar and then bake in oven at 338° F for about 50 minutes.
At the end of cooking, turn off the oven, open the dorro and let the cake rest for 10 minutes before bring out.
