Easy Greek Cheese Bread (Tyropsomo)

This is an old recipe that I have updated. I hope you enjoy it!

This week has been a little strange maybe the heat, maybe the planets, or maybe I’m just tired. The planets ohhh, the eclipse. What a week this has been!!  The first time I tried this fried cheese bread was during a summer vacation in Greece back in the 70s. I was 11 years old, visiting family friends in Chalkida; it’s about 70 klm outside of Athens.  This recipe originally comes from that region. I remember watching my mom’s friend frying the dough and thinking, “Frying bread? What is she doing?”

Chalkida is a seaside town and famous for its mysterious tidal currents. The water in the Evripos Strait changes direction every few hours.  Almost as if it has a mind of its own. People stand on the old bridge just to watch the currents swirl and shift. And even today no one fully understands why it behaves that way.  Believe you me, I have stood on that bridge so many times. I still can’t, for the life of me, understand what is going on!!! hehehhe

Chalkida has this relaxed, welcoming feeling, the kind of place where everyone sits outside, doors open, voices carrying through the neighborhood.  You hear people chatting from balconies, smell food cooking from open windows, and there’s always a breeze coming off the Evripos Strait. It’s the kind of place where life feels slower, warmer, and more connected.

I made a batch of these little breads and popped them into the freezer.  They might remind you of a Greek cheese pie (tyropita), but the taste is completely different. Tyropita uses tissue‑thin phyllo sheets, while this recipe is more like a puff‑pastry‑style cheese bread, and instead of baking, it’s fried in vegetable oil.

Easy Greek Cheese Bread (Tyropsomo)

Unlike tyropita, this recipe uses a puff‑style dough and is fried until golden, making it perfect for quick snacks or freezer‑ready meals. Made with feta cheese.

Ingredients
  

  • 1 ½ cups self-rising flour
  • ¾ cups milk
  • ¾ cups Greek yogurt full fat
  • 3 eggs large and whisked
  • 4 tbsp kefalotyri or parmesan cheese grated
  • 1 ¼ cup feta cheese crumbled
  • 1 tsp baking powder
  • ¼ cup butter plus 1 tsp for the baking pan melted

Instructions
 

  • Preheat the oven to 200℃
  • In a separate bowl mix together the 1 ½ cups self-rising flour, and the 1 tsp baking powder.
  • Combine the  ¾ cups milk, ¾ cups Greek yogurt3 eggs and ¼ cup butter in one bowl. Whisk until smooth.
  • Stir in the crumbled 1 ¼ cup feta cheese and  4 tbsp kefalotyri or parmesan cheese. Gently stir.
  • Add the dry ingredients to the wet mixture and stir until everything is well combined.
  • Use a baking brush to lightly coat your baking pan with the 1 tsp of butter before pouring in the batter.
  • Bake for 35 minutes until golden brown.
  • Serve hot
