Black‑Eyed Pea Salad (Mediterranean Style)

Hello everyone,

This is the last of the summer salads I had prepared, and honestly, it’s one of my favorites. Black‑eyed pea have always been that humble little ingredient I reach for when I want something fresh and simple.

My mother used to prepare black‑eyed peas in soups, stews, and even warm salads, but as I started cooking on my own, I realized how beautifully they work in cold salads too. They have a soft, creamy texture that absorbs olive oil and lemon like a sponge, and they pair perfectly with crisp vegetables and fresh herbs.

For this salad, I use cooked black‑eyed peas, plenty of fresh parsley, red pepper, spring onion (no dill this time), and a generous drizzle of good Greek olive oil.  The lemon brings the tangy taste and brightness, the olive oil adds richness, and the vegetables give crunch. If you want to make it heartier, you can add tuna, feta, or even a handful of arugula. It’s one of those recipes that adapts to whatever you have in your fridge.

You can serve it as a light lunch (which I recommend for those hot days), a side dish, or even as part of a mezze table. It keeps beautifully in the fridge, making it ideal for meal prep or busy days when you want something homemade but don’t have the energy to cook. And like all Mediterranean recipes, it tastes even better after a few hours when the flavors have had time to blend.

A bright and refreshing Mediterranean Black‑Eyed Peas Salad made with simple ingredients, fresh herbs, lemon, and good olive oil.

Ingredients
  

  • 1 cup black-eyed pea boiled
  • 1 red bell pepper sliced
  • 2 fresh spring onions sliced
  • 1 cucumber sliced
  • parsley
  • ¼ cup olive oil
  • 1 lemon juice
  • salt
  • pepper
  • oregano

Instructions
 

  • Boil the 1 cup black-eyed peas in salted water until tender. Once they’re soft, drain them and set aside to cool completely.
  • Place the cooked black‑eyed peas in a medium bowl and mix them with the 2 fresh spring onions
  • Spread the sliced 1 red bell pepper, 1 cucumber , and parsley on top. Toss so that all the ingredients combine beautifully.
  • In a separate bowl, whisk together the ¼ cup olive oil, 1 lemon juice, salt, and pepper until well combined.
  • Drizzle over the salad and sprinkle a bit of oregano.
  • Serve cold.
