Crunchy Roasted Crushed Potatoes

Hello foodie friends,

I’ve been meaning to make this Crunchy, Roasted Crushed Potatoes recipe for a while now.  I’m not sure why it to me so long, but I finally got around to it.  I found potatoes that were about the same size. No, they are not baby potatoes, so first, the potatoes I started by boiling the potatoes until fork-tender.  Then, I gently smashed the potatoes with a masher to get those crispy edges.  If you don’t have a potato masher, you can use either the bottom of a bottle or a heavy pan.   

I’ve also added whole garlic cloves to these potatoes for extra flavor. As the garlic roasts, it turns golden and tender, releasing a rich, savory aroma that seeps into the crispy potatoes, enhancing their flavor with a subtle sweetness and depth.  Combining crispy, golden-brown potatoes and roasted garlic creates an irresistible side dish that pairs perfectly with any meal. To enhance the flavor even more, I drizzled over the potatoes with olive oil and sprinkled a bit of sea salt and fresh herbs like rosemary and dried oregano.  The herbs I used were my choice, but you can add your favorite herbs that suit your taste!

Crispy Roasted Crunchy Potatoes

This Crunchy Roasted Crushed Potatoes recipe is a deliciously buttery and aromatic dish that is simple yet incredibly and a crowd-pleaser!

Ingredients
  

  • 7 potatoes medium size
  • ¼ cup avocado oil
  • 5 rosemary stems
  • 1 ½ tbsp dried oregano
  • 4 garlic cloves whole with their peel
  • 1 red onion large and sliced
  • pepper seasoning
  • salt seasoning

Instructions
 

  • Boil the potatoes in salted water until fork-tender.
  • Use the potato masher to smash down the potato..
  • Preheat the oven to 375℉/190℃.
  • Layer the sliced onion on the bottom of the cast iron to create more flavor.
  • Place the potatoes in the pan and drizzle with avocado oil. Arrange the rosemary stems and whole garlic cloves around the potatoes.
  • Season the potatoes with dry oregano, salt, and pepper.
  • Baked potatoes until crispy and golden brown.
