Cold Greek Lentil Salad

Lentil fan or not?  Okay, if you are, I will say this: lentils don’t get the love they deserve.   Sure, we have a bunch of lentil variations but let’s be honest for a sec… how often do you cook with lentils? I mean, they’re always there, sitting patiently in the pantry like, “Pick me! Pick me!” And most of the time? They are ignored.  hehheheheh. But when you finally give lentils their moment to shine, they show up big time,  just like in this refreshing, zesty Cold Greek Lentil Salad. Yummyyy! So if you’ve been sleeping on lentils, consider this your friendly nudge to wake them and yourself up. 🙂

What took this salad to a whole new level? The roasted peppers. But not just any roasted peppers, I tossed them with olive oil and popped them into the air fryer. Boom! Sweet, slightly charred, and sooo flavorful.  I did the same thing with the cherry tomatoes, roasted them in the air fryer with olive oil. The weather has been a bit hot and cold these past weeks, and so this was a sunny, beautiful, and hot day, and it was time for this treat of a salad.

This Cold Greek Lentil Salad is proof that lentils can totally steal the show. I threw this together one afternoon when I was craving something light, fresh enough to keep me full. It’s packed with crunchy cucumbers, juicy roasted cherry tomatoes, fresh spring onions, ohhh so tasty. I tossed it all in a zesty lemon-olive oil dressing with a little finely chopped dill.

Here’s the thing, though it actually tastes better after a little chill time in the fridge. The flavors combine and get all cozy with each other, and suddenly you’re like, “Why don’t I make this more often??” It’s perfect for meal prep, lunch on the go, or serving up as a side dish at your next BBQ. I mean, it’s practically begging to be eaten with a piece of crusty bread.  And full disclosure, I may or may not have eaten it straight out of the bowl standing in front of the fridge… multiple times. (I did, I did, I did!)

Cold Greek Lentil Salad

Equipment

  • 1 air fryer

Ingredients
  

  • 1 ½ cups Lentis boiled and drained
  • 1 red pepper mini
  • 1 yellow pepper mini
  • 1 green pepper mini
  • 3 spring onions fresh and chopped
  • 2 tbsp dill fresh and finely chopped
  • 2 tbsp parsley fresh and finely chopped
  • 1 cucumber cut into small peices
  • 2 tbsp basil finely chopped
  • ¼ cup olive oil
  • 1 lemon squeeze juice (add more if you want more zest)
  • salt
  • pepper
  • 10 cherry tomatoes cut in half

Instructions
 

  • Place the cherry tomatoes into the air fryer basket, give them a quick spritz with olive oil spray, and cook at 200°C until slightly charred and softened.
  • Place the mini peppers into the air fryer basket, give them a quick spritz with olive oil spray, and cook at 200°C for 5 minutes until they're slightly charred and softened.
  • Toss everything into a big bowl and give it a gentle stir.
  • Season with salt and pepper.
  • Add the lemon juice and olive oil to a dressing shaker or a jar with a good lid.
  • Give it a good shake, shake, shake, and pour it all over your salad to coat everything nicely.
  • Place the salad in the fridge to chill for a little while.
  • Serve with your favorite crunchy bread.
