A healthy, herby, zesty, delicious Cold Greek Lentil Salad, made with delicious fresh ingredients.

- 1 ½ cups Lentis boiled and drained
- 1 red pepper mini
- 1 yellow pepper mini
- 1 green pepper mini
- 3 spring onions fresh and chopped
- 2 tbsp dill fresh and finely chopped
- 2 tbsp parsley fresh and finely chopped
- 1 cucumber cut into small peices
- 2 tbsp basil finely chopped
- ¼ cup olive oil
- 1 lemon squeeze juice (add more if you want more zest)
- salt
- pepper
- 10 cherry tomatoes cut in half
Place the cherry tomatoes into the air fryer basket, give them a quick spritz with olive oil spray, and cook at 200°C until slightly charred and softened.
Place the mini peppers into the air fryer basket, give them a quick spritz with olive oil spray, and cook at 200°C for 5 minutes until they're slightly charred and softened.
Toss everything into a big bowl and give it a gentle stir.
Season with salt and pepper.
Add the lemon juice and olive oil to a dressing shaker or a jar with a good lid.
Give it a good shake, shake, shake, and pour it all over your salad to coat everything nicely.
Place the salad in the fridge to chill for a little while.
Serve with your favorite crunchy bread.
