Beetroot Salad with Greek Yogurt

Hey foodie friends,

This morning I woke up feeling as if the walls were coming down on me.  I didn’t sleep well, tossed and turned most of the night.  I was trying to understand what has happened in my life.  It has been one of the hardest summers that I have had to deal with. I haven’t had the time to just sit and think, and try to understand what happened.  And to top it all off, I haven’t been feeling well a slight runny nose and a sore throat.   Geezzz

With the hectic schedule that I have lately, I made some time yesterday to plan out my cooking calendar for the next few months.  Half way through I fell asleep hahahhaah.  I’ve been working quite a lot lately, so I think this is my body telling me it’s time to slow down. 🙂

And so I started by making the most simpliest salad, Beetroot salad a few days ago, now you are probably wondering why  Beetroot?  hmmm, I guess I was just looking to make something different.  My hubby loves Beetroot, and so this is really the reason why I made this salad.  I found that the yogurt gave it a suprisingly delicious taste, buttttt you seriously need to like eating Beetroot to enjoy this salad.  I am not much of a fan, but the Greek yogurt and Smoked Paprika made a world of difference. 🙂

Have a wonderful day my fellow foodie friends 🙂

  2. Take care of yourself. Its hard to slow down and take it all in. I have never had beetroot but will definitely try it. 💗
  3. Oh Sophie, I'm so sorry. It really does sound like you need some time to step away from things and reflect, to calm the storm in your head and work through everything that's happened. I think being hectic can mean we push our feelings to one side and keep ourselves busy, but all that 'stuff' is still there and building up. Take care of yourself because there's only one you.  ♥ PS. Must admit I hate beetroot but my dad loves it so I'll pass this one to him! Caz xx
  4. Dear Sophie, try to get some rest and take care of yourself too! I love eating beetroot!
  5. Delightful to tastebuds 👍
