Hey foodie friends,
This morning I woke up feeling as if the walls were coming down on me. I didn’t sleep well, tossed and turned most of the night. I was trying to understand what has happened in my life. It has been one of the hardest summers that I have had to deal with. I haven’t had the time to just sit and think, and try to understand what happened. And to top it all off, I haven’t been feeling well a slight runny nose and a sore throat. Geezzz
With the hectic schedule that I have lately, I made some time yesterday to plan out my cooking calendar for the next few months. Half way through I fell asleep hahahhaah. I’ve been working quite a lot lately, so I think this is my body telling me it’s time to slow down. 🙂
And so I started by making the most simpliest salad, Beetroot salad a few days ago, now you are probably wondering why Beetroot? hmmm, I guess I was just looking to make something different. My hubby loves Beetroot, and so this is really the reason why I made this salad. I found that the yogurt gave it a suprisingly delicious taste, buttttt you seriously need to like eating Beetroot to enjoy this salad. I am not much of a fan, but the Greek yogurt and Smoked Paprika made a world of difference. 🙂

Beetroot Salad with Greek Yogurt
Ingredients
- 2 cups Beetroot (shredded)
- 1/2 cup Greek Yogurt
- 1 1/2 tbsp Olive Oil
- 1 Garlic Clove (optional)
- 1 tsp Salt
- 1 tbsp Smoked Paprika
- 1 tbsp Balsamic Vinegar (optional)
Instructions
- Boil Beetroots, set aside to cool. Peel off skin and shred (I used a grater)
- Add in Greek Yogurt, Olive Oil, Salt, Smoked Paprika. Combine ingredients.
- Place in fridge for one hour.
