Vegetarian Mushroom Pita Pizza

Hi there everyone!!

Mushrooms and dill are my favorite ingredients, and for this Vegetarian Mushroom Pita Pizza, I’ve also added parsley. These herbs bring a savory depth and a fresh, aromatic touch to the pizza, making it even more delicious!  Whether it’s a simple sauté, a hearty soup, or this Mushroom Pita Pizza, the combination of mushrooms, dill, and parsley enhances the flavors, making each bite incredibly flavorful!

For this recipe, I decided to switch things up and use two different types of mushrooms instead of Chanterelle mushrooms. I chose Champignon and Portobello mushrooms, which added a balance of flavor to the pizza. Their hearty, taste paired perfectly with the marinade, making the result even more delicious! I marinated the mushrooms overnight, allowing them to absorb all the delicious seasonings for a richer, more aromatic taste.

Mushroom pita pizza is a quick, delicious, and healthier option to traditional pizza. Using pita bread as the base makes it extra easy to prepare quickly. Top a corn, wholewheat, or regular pita with a layer of sautéed mushrooms, and your favorite seasonings. This pizza is completely cheese-free, letting the flavors of the marinated mushrooms come through. Garnish with a sprinkle of fresh parsley or a drizzle of olive oil. This simple yet satisfying pizza is perfect for a quick lunch, dinner, or snack!

In the previous recipe I posted a few years ago,  I used a whole wheat pita, but this time, I went with corn pita bread, which I also marinated in olive oil and smoked paprika that I brought back from Greece. The slightly sweet flavor of the corn pita added a unique twist to the mushroom pizza, making it even more delicious! For the mushrooms, I marinated them with olive oil, balsamic vinegar, finely chopped dill, smoked paprika, salt, and pepper, which gave them a rich, aromatic flavor that perfectly complemented the corn pita base.

Vegetarian Mushroom Pita Pizza

A delicious combination of mushrooms marinated overnight in olive oil, smoked paprika, and balsamic vinegar and a corn pita bread as the base.

Equipment

  • 1 pizza pan non stick
  • 1 bowl
  • 1 wooden spoon
  • 1 pizza cutter
  • 1 pairing knife
  • 1 parchment paper piece

Ingredients
  

  • 1 cup champignon mushrooms sliced
  • 1 cup portobello mushrooms sliced
  • 1 ¼ cup olive oil
  • 2 tbsp creamy balsamic vinegar
  • 1 tbsp oregano
  • 1 ½ tsp smoked paprika
  • salt
  • finely chopped dill
  • 1 garlic clove crushed
  • parsley
  • 2 corn pita bread

Instructions
 

  • Preheat oven at 190℃.
  • Combine the cup of olive oil, creamy balsamic vinegar, crushed garlic, oregano, smoked paprika, dill, salt, and pepper in a mixing bowl. Stir everything together until well combined. Add in the mushrooms, place the bowl in the fridge overnight.
  • The following day, marinate the pita bread in ¼ cup of olive oil and ½ tsp of smoked paprika for about 30 minutes, allowing the pita bread to soak up all the flavors before you assemble the pizza.
  • Remove the pita bread from the marinade and place the mushroom mixture on top of the bread. Line the baking pan with parchment paper and place the prepared pita on it. Bake in the oven for about 20 minutes, or until the mushrooms are tender.
  • Garnish with fresh parsley and then use the pizza cutter to cut into slices and serve.
