Vegetarian Mushroom Pita Pizza

A delicious combination of mushrooms marinated overnight in olive oil, smoked paprika, and balsamic vinegar and a corn pita bread as the base.

  • 1 bowl
  • 1 wooden spoon
  • 1 pizza cutter
  • 1 pairing knife
  • 1 parchment paper piece

Ingredients
  

  • 1 cup champignon mushrooms sliced
  • 1 cup portobello mushrooms sliced
  • 1 ¼ cup olive oil
  • 2 tbsp creamy balsamic vinegar
  • 1 tbsp oregano
  • 1 ½ tsp smoked paprika
  • salt
  • finely chopped dill
  • 1 garlic clove crushed
  • parsley
  • 2 corn pita bread

Instructions
 

  • Preheat oven at 190℃.
  • Combine the cup of olive oil, creamy balsamic vinegar, crushed garlic, oregano, smoked paprika, dill, salt, and pepper in a mixing bowl. Stir everything together until well combined. Add in the mushrooms, place the bowl in the fridge overnight.
  • The following day, marinate the pita bread in ¼ cup of olive oil and ½ tsp of smoked paprika for about 30 minutes, allowing the pita bread to soak up all the flavors before you assemble the pizza.
  • Remove the pita bread from the marinade and place the mushroom mixture on top of the bread. Line the baking pan with parchment paper and place the prepared pita on it. Bake in the oven for about 20 minutes, or until the mushrooms are tender.
  • Garnish with fresh parsley and then use the pizza cutter to cut into slices and serve.
