I use carrots when preparing Greek soups, such as the Greek Lentil soup or Greek White Bean Soup (Fasolada). I’m not excluding the other international cuisine recipes that I love to make..  But today? Ohhh, today is their moment.  For this recipe, all you really need are a few carrots, a drizzle of honey, a splash of olive oil, and your favorite seasoning.  The moment these carrots hit the oven, the kitchen fills with a caramelized, cozy aroma that screams ‘winter side dish’!

For this year’s Thanksgiving table, place a serving dish with these carrots right next to your turkey or chicken, like the sweet little stars they are. Sweet Honey Roasted Carrots

These Sweet Honey Roasted Carrots are beautifully golden, naturally sweet, and full of warm, comforting flavor. With just honey, olive oil, and simple seasonings, they roast into a tender side dish that pairs perfectly with any meal.

Cook Time 30 minutes

Equipment

  • 1 baking tray
  • 1 bowl large
  • 1 cutting board
  • 1 knife
  • 1 wooden spoon
  • 1 garlic mincer

Ingredients
  

  • 10 carrots medium-sized washed, peeled, and sliced.
  • ¼ cup parmesan cheese grated
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 garlic cloves minced
  • 2 shallot onions finely chopped
  • white pepper optional

Instructions
 

  • Preheat oven to 180℃
  • Place all the ingredients into a large bowl, and use the wooden spoon to gently toss and coat the carrots until they’re covered.

  • Cook for 30 minutes or until the carrots are tender.
  • Serve as a side dish hot or cold.
