Hey there foodies,
Some vegetarian recipes really do know how to steal the spotlight, don’t you think? These sweet honey-roasted carrots are exactly that kind of dish. They disappear faster than anything else on the table, and every time I’m left standing there shocked, thinking, ‘Wait… didn’t I make a whole tray?’ It’s always the first side dish to vanish, and honestly, I can’t blame anyone. They’re just that good.
I’ve always believed that carrots don’t get enough love. They’re reliable, affordable, sweet, and crunchy. I use carrots when preparing Greek soups, such as the Greek Lentil soup or Greek White Bean Soup (Fasolada). I’m not excluding the other international cuisine recipes that I love to make.. But today? Ohhh, today is their moment. For this recipe, all you really need are a few carrots, a drizzle of honey, a splash of olive oil, and your favorite seasoning. The moment these carrots hit the oven, the kitchen fills with a caramelized, cozy aroma that screams ‘winter side dish’!
For this year’s Thanksgiving table, place a serving dish with these carrots right next to your turkey or chicken, like the sweet little stars they are. And if you’re anything like me and get the late-night munchies, whip up a batch during the week. Carrots are soooo versatile, they’re perfect for those moments when you want to snack on something that isn’t a bag of potato chips.
So if you’re looking for a simple, naturally sweet, crowd-pleasing veggie dish that practically makes itself… these Sweet Honey Roasted Carrots are about to become your new go-to side dish. You’ll seeeee 🙂
Wishing everyone a wonderful morning/afternoon/evening and weekend!
