Soft Chewy Double Chocolate Cookie Recipe

Happy Tuesday everyone!! Hubby is doing better after his HA so it was time to treat him to his favorite cookies Soft and Chewy Double Chocolate Cookies. 🙂  I made two batches of these cookies, and here’s why after baking the first batch the cookies came out FLAT!! Flat I say!! I could barely peel them off the baking paper.  What is it with me and baking!!???    Granted, I may not be the best Pastry Baker in the world but this is a simple 1, 2, 3 step recipe. 🙁  This is why I avoid baking because I usually have to try it a few times before I can get it right.  Is it me??  I have all the necessary utensils, from scales to spatulas, what! what! what am I doing wrong?!!??

I was so frustrated that I gave up and went into the living room to put on some music.  There’s this one song that I really like and have been learning the line dance.  It took me about 10 minutes to learn the steps quite easy to learn. I went back into the kitchen to prepare the second batch of cookies.  Woo hoo, they batch out looking and tasting scrumptious.  I loved how the house smelled of baked cookies.  Charlie was in the kitchen with me the whole time, his nose up in the air, and sniffing cookie air. hehehe

Halloween is coming up soon, so I will give baking another try.  Let’s see how many tries I will need to do to get them right. 🙂

Soft and Chewy Double Chocolate Cookie Recipe

A cookie recipe made with cocoa powder for a more intense taste.
Prep Time 15 minutes
Cook Time 25 minutes
Course Dessert, Snack
Cuisine American
Servings 4 people

Ingredients
  

  • 1 cup All-Purpose Flour
  • ½ cup Butter melted
  • 1 Egg
  • 2 grams Baking Soda
  • 5 grams Baking Powder
  • ¾ cups Sugar
  • Salt pinch
  • 1 tbsp Vanilla Extract
  • 1 ½ cups Cocoa Powder
  • 2 tbsp Water

Instructions
 

  • In a medium-size bowl add-in ingredients except for cocoa powder. Combine into a smooth batter
  • Add-in Cocoa Powder and combine.
  • Roll a few times into a medium-size ball of dough
  • Roll 1 tablespoon of cookie dough into a ball.
  • Bake for 25 min (depending on your oven) at 180 and under soft. Set aside to cool.

  2. Hahaha that's what happened to the last batch I tried - totally flat, skinny, spread out & rubbish! No idea what happened there 😂 I'll need to try this recipe next time! Love the new-ish photo of you on your website on the right too. Not sure if I said that before (memory's going too - it's not just my baking skills that are awful!) xx
