Hey there everyone!! How are things? So, yesterday was a bit of an exhausting day. I had finished cleaning the front lawn from leaves, weeds etc. before leaving for my trip. I still had the backyard/garden to do but I just couldn’t deal with cleaning that up since it is a bigger area. Work and other projects, have been keeping me very busy lately. 🙂 When I was done with the garden, it looked so nice, neat and pretty! But when I returned from Greece it had become a jungle!!! I couldn’t believe my eyes..How does a garden become a jungle in 2 1/2 weeks!!! I have never seen this happen before. uffff
Yesterday I woke up, worked for a few hours, and then hit the front lawn AGAIN!! Ok, so after about 3 hours of trying to make the lawn look decent enough I stopped and went to start on the backyard/garden. By the time I entered the house to go to the back hubby was already working on it. But it was already 2pm in the afternoon, and the sun was blazing hot hot hot!! We are suppose to be having a short heatwave here in NL. 🙂 There is a bit more work to be done but I can finish it off next weekend. 🙂
I headed for the kitchen, opened up the cabinets and found some Pitta Breads I brought back from Greece, and made these delicious snacks. I always have Feta Cheese and Tomatoes on hand so this was going to be simple and it only took me about 10 minutes. 🙂 (Keep in mind that you can always omit the cheese and top the pittas off with some Olives like i did) 🙂
Once the Pitta Snacks where done I spent the rest of the day watching tennis. The much awaited match between Stefanos Tsitsipas and Stan…If you are a tennis fan I am sure you must have enjoyed the match as much as I did!!!

SIMPLE PITTA BREAD TOMATO AND FETA CHEESE APPETISER
Ingredients
- 6 Pitta Breads cut in 4 pieces
- 2 cups Cherry Tomatoes / 500 grams Cherry Tomatoes
- 1 cup Feta Cheese / 250 grams Feta Cheese
- Onion finely chopped
- 1 tablespoon Oregano
- 1 tablespoon Dill
- 2 tablespoons Smoked Paprika
- Salt
- Pepper
- 1/4 cup Olives
- Olive Oil
Instructions
- Cut Pitta Breads into 4 pieces.
- Combine smoked paprika, oregano, oilive oil, salt thoroughly on bread. In a pre-heated oven place bread for a few minutes.
- Place tomatoes, dill, onion, oregano, salt, olive oil into a large skillet pan and sauté for a few minutes.
- Serve hot!!
