How is everyone? Looking forward to the weekend? I surely am!! Definitely in need of some R&R and fast. 🙂 My first lesson started very early in the morning, so by the time I was able to take a break it was lunch time, and I was starving. 🙂 It has been some what of a challenging week, but I am still going strong, tired but strong. 🙂
I had planned before hand what I wanted to have for lunch, it was going to be Rice with Rucola Pesto. Sound interesting to you??? I went to the kitchen took out my pots and pans and got to work. I went ahead and boiled the rice, while preparing the Pesto. I had already shopped for Rucola, and Parsley a few days ago, so there was no need to run out to the market to shop for any of the ingredients.
I love Pesto!!! I prefer Tomato instead of the Basil because I find that the Basil is just a bit to strong for my tastebuds. This Pesto recipe makes a great topping for Chicken, Fish and of course Pasta. 🙂
RUCOLA PESTO WITH SUN DRIED TOMATOES
- 300 grams Rucola
- 200 grams Parsley
- 1/4 cup Olive Oil
- 2 Garlic Cloves optional
- 6 Sun Dried Tomatoes drained from excess oil
- 1/2 cup Parmesan Cheese
- Place all the ingredients into a blender or a food processor and blend on high speed.
