Hey there!!
How is everyone? Well, Fall has arrived here with non stop rain. I think I may have seen just a few sun rays for a few seconds the other day but that’s about it. Ok, but the fact is that I do love this season, the brown color tones are gorgeous. But that’s just me, I love the earthy colors. 🙂
My daily walks with Charlie, now include hubby. Which is great because we take much longer walks than the usual 1 hour morning walk that I used to take with Charlie. Charlie loves to run, he’s a dog of course he loves to run. 🙂 I take him to a park close to our house. The park is full of leaves and he just loves running through the leaves because of that crackling sounds. This morning it was really funny, he suddently stops, he sat and tilted his head left and right. I could see that he was trying to figure out where that sound could possibly be coming from. 🙂
So, during my morning walk with Charlie and hubby I was so inspired by the colors I saw that I wanted to make a dish with similar colors. 🙂 I had almost all the ingredients except for the Green Peas. I popped into our neighborhood supermarket, and pick up a few more things and returned home to start cooking.
Keep in mind that this recipe is definitely budget friendly and quick to make. And of course very tastyyyy. I really do not like eating Green Peas but this dish has seriously changed my mind. 🙂 A simple and quick dish to prepare when you are in a rush. It takes about 30 minutes to put together and believe me with a delicious taste.

Roasted Peas with Sun Dried Tomatoes and Mozzarella Cheese
Ingredients
- ½ onion (finely chopped)
- 6 cups Green Peas
- ½ cup Sun dried Tomatoes chopped
- ½ tbsp of Tomato Paste
- ½ cup Grape/Cherry Tomatoes
- 1 tbsp Oregano
- 1 cup Mini Mozzarella Balls
- ⅓ cup of Extra Virgin Olive Oil
- 3 tbsp Sun Dried Tomatoes Oil
Instructions
- Pre heat oven to 180
- Saute chopped onion for a few minutes.
- Add in all the ingredients and continue to stir for 10 minutes.
- Add in 3 tablespoons from the Sun Dried Tomatoes.
- Add the mixture into a baking pan and top with Mini Mozzarella Balls
- Bake for 15 minutes or until cheese has melted.
