Hi there,
This is a stunning Roasted Figs and Feta Cheese appetizer prepared with freshly baked figs and feta cheese. The fresh figs melt and the texture is smooth and tasty like warm jam. Combining that with baked feta cheese will blow you out of this world. I’ve tossed the sliced fresh Greek figs in olive oil and drizzled with honey over the figs. I drizzled honey over the feta cheese before baking and sprinkled thyme and chopped walnuts. Fig season is over in Europe specifically Greece, because I brought back these fresh figs for this recipe. They were the last great batch I could find and were so delicious.
I used a salty Greek feta cheese for this recipe and with the roasted figs became a spreadable soft and sweet compote that is just irresistible. Roasted figs are one thing but roasting feta cheese alongside it just melts and you can’t help but eat, scrape, or wipe the pan down with fresh bread, crackers, or whatever you can get your hands on. So, try to find a block or blocks of salty good brined Feta cheese which is the key ingredient for this recipe. One more ingredient that kicks up this recipe is the thyme. Remember herbs always make a delicious difference in any given recipe.
While speaking to my mom the other day I mentioned this recipe and she told me it’s an old recipe prepared in her village. My mom mentioned that my grandparents had fig trees in the garden back in the day. She remembers her mom making if not the same recipe very similar to this one. My mom’s village is quite beautiful in the Archadia Peloponission region of Greece. A mountain village that has become a winter destination with winter resorts. It has become a beautiful wonderland for those who love a calming, stay-in inside and chill vacation.
Wishing everyone a wonderful morning/afternoon/evening
