Hello everyone,
This first post of 2024 is a Potato Egg Omelet recipe, with very few ingredients making this an ideal quick meal. I haven’t been cooking much so I thought I would start with a meal that takes under 30 minutes to prepare. There is an abundance of Potato Egg Omelet Recipes on the net from all over the world. But this recipe has a little of the Mediterranean and Middle East combined and is full of flavors. You can also season this omelet with herbs when serving it for lunch, and or dinner.
I prepared this omelet for a Saturday Brunch so I didn’t add herbs or spices. These ingredients are better suited for lunch.
The main ingredients to prepare this Potato Egg omelet recipe are two potatoes and eggs. I added an onion to give it more of a kick because I was serving this for lunch. To make it colorful I grated cherry tomatoes of a larger size and combined them with the eggs before adding them to the potatoes. Usually, when I have a recipe that entails potatoes, I boil the potatoes for a few minutes. I don’t overboil them because the potatoes will continue to cook in the oven with the rest of the ingredients. Boiling the potatoes saves time and the cooking process is much faster.
I know that this dish may not look super scrumptious, but believe me you will love it once you give it a try.
These past few months have been a difficult time for me and still are in all honesty, many tell me that life goes on. I know it does, but for some people, dealing with things takes longer than others. I am taking things slow for now and slowly getting back into cooking and life.
Potato Egg Omelet Recipe
Ingredients
- 5 eggs large
- 1 onion chopped
- 6 cherry tomatoes grated
- 6 potatoes cut in halves
- pepper
- salt
- 2 tbsp olive oil
Instructions
- Preheat oven to 180c. Add the halved potatoes to boiling water for 5 minutes. Drain and set aside.
- In a large bowl add the diced onion, the eggs, salt, and pepper and beat.
- Pour the two tablespoons of olive oil into the pan and layer the potatoes. Add the egg mixture on top and place into the oven until golden brown.
- Serve hot, and as a sandwich
