Potato Egg Omelet Recipe

Eggs, potatoes, and cherry tomatoes make this an ideal breakfast, lunch, or dinner idea.

- 5 eggs large
- 1 onion chopped
- 6 cherry tomatoes grated
- 6 potatoes cut in halves
- pepper
- salt
- 2 tbsp olive oil
Preheat oven to 180c. Add the halved potatoes to boiling water for 5 minutes. Drain and set aside.
In a large bowl add the diced onion, the eggs, salt, and pepper and beat.
Pour the two tablespoons of olive oil into the pan and layer the potatoes. Add the egg mixture on top and place into the oven until golden brown.
Serve hot, and as a sandwich
