Orange Sponge Cake

Foodie friends,

I had a few extra oranges in my fruit bowl and went ahead and made this Orange Sponge Cake.  A fluffy and full-of-flavor cake with fresh orange juice and orange zest.  This cake has been quite popular in Greece for many years now.  Greek cuisine has another version of an orange cake called Portokalopita, but the difference is that Portokalopita has a sugary syrup and phyllo dough.

I bought a package of self-rising flour a few weeks ago, and it’s been sitting in my pantry since before the holidays.  I was going through my mom’s cookbook looking for an orange cake recipe and I remembered I had made this cake ummmm maybe three years ago.  While skimming through the cookbook I found the recipe. Guess what I had forgotten that it called for self-rising flour.  So, I started to take out the rest of the ingredients that I would need.  I went to zest the orange and then squeeze the orange so I could get that out of the way.   Zesting an orange or a lemon is dangerous for me I always scratch myself on the grater!  Don’t laugh, I am sure you have all at some time or another scratched a finger or two on the grater.

Typically,  Orange sponge cake can be eaten as is, but I  preferred to sprinkle confectioner sugar on this cake.  One ingredient in this cake that makes it even lighter is the Non-fat Greek Yogurt I added.  I also substituted regular butter with Vegan butter I was very happy with the result.  FYI, If you do not have self-rising flour you can also use all-purpose flour with a few teaspoons of baking powder.

This Orange Sponge Cake has a beautiful aroma to it along with a lovely taste of orange flavor.  It is a simply delicious cake with your favorite coffee or tea and so simple to make.

Orange Sponge Cake

Equipment

  • 1 stand mixer
  • 1 round silicone baking pan
  • 1 large bowl
  • 1 scale

Ingredients
  

  • 2 oranges zest
  • 3 cups self-rising flour
  • ¾ cups Vegan butter room temp
  • 1 cup sugar
  • 3 eggs
  • cup freshly squeezed orange juice
  • cup non-fat greek yogurt
  • cup vegetable oil
  • confectioner sugar

Instructions
 

  • Preheat oven to 180℃
  • Add the butter and sugar into your mixing bowl. At first mix on low speed and gradually up the speed to medium speed.
  • Add in the eggs one at a time. Then slowly pour in the orange juice and orange zest. Continue to mix.
  • Slowly add in the self-rising flour and then the Greek yogurt. The final step is to add in the vegetable oil. Mix until all the ingredients have combined.
  • Pour the batter into the silicone baking pan.
  • Bake for one hour until golden brown. Test the cake for readiness by inserting a cake tester or toothpick in the center of the cake.
  • Set aside to cool off sprinkle confectioner sugar and then serve with a scoop of ice cream.
