Orange Sponge Cake

A fluffy and full-of-flavor cake with fresh orange juice and orange zest. Simple and easy cake that is great with coffee or tea.

- 2 oranges zest
- 3 cups self-rising flour
- ¾ cups Vegan butter room temp
- 1 cup sugar
- 3 eggs
- ⅔ cup freshly squeezed orange juice
- ⅔ cup non-fat greek yogurt
- ⅛ cup vegetable oil
- confectioner sugar
Preheat oven to 180℃
Add the butter and sugar into your mixing bowl. At first mix on low speed and gradually up the speed to medium speed.
Add in the eggs one at a time. Then slowly pour in the orange juice and orange zest. Continue to mix.
Slowly add in the self-rising flour and then the Greek yogurt. The final step is to add in the vegetable oil. Mix until all the ingredients have combined.
Pour the batter into the silicone baking pan.
Bake for one hour until golden brown. Test the cake for readiness by inserting a cake tester or toothpick in the center of the cake.
Set aside to cool off sprinkle confectioner sugar and then serve with a scoop of ice cream.
