Hi everyone!! I’m not sure but I think because March has kicked in I am definitely starting to feel that Spring fever….I can’t seem to sit in one place and especially in front of my computer to write my post. It took me a few hours but I finally just sat down!! 🙂 but I keep staring out the window at the trees, the flowers, which I’ve noticed have started to bloom, (make note to myself time to start planting my herbs) people walking with their dogs, jogging, some ladies chatting away, actually quite unusual?? Did everyone take the day off? hmmm
Ok, I need to gather my thoughts and write this recipe, a Mussel and Rice dish that is so delicious that I am sure you will enjoy..of course that is if you enjoy eating Mussels..:) This recipe is usually made in the summer, but I can’t seem to wait a couple of month so I went ahead and made it today. I went to our local fish market this morning and was so happily surprised because they have a huge variety of fishes to select from. Shrimps to Salmon to some large fish, that I don’t even think I have ever seen before…click, click, click, many delicious ideas came to mind..:)
Spring fever, Summer fever that’s what’s going on in my head at the moment. 🙂 Is anyone else out there feeling like me or is it just me..???

MOUTHWATERING MUSSEL PILAF DISH
Ingredients
- 350 gram fresh Mussels boiled drain but do not throw out the water used to boil the Mussels
- 1 1/2 cup Long Grain Rice
- 1/2 cup White Wine
- 1 Onion chopped
- 1/4 cup Olive Oil
- 1 teaspoon Tomato Paste and 2 fresh Tomatoes grated
- Salt
- Pepper
Instructions
- Long Grain Rice…I used Uncle Ben’s Rice
- Fresh Mussels
- In a frying pan add the olive oil, onions and sauté for a few minutes…Then add in the Mussels and give it a few stirs.
- Continue by adding in the dry white wine, salt, pepper and the boiled water that was set aside. Continue to stir.
- Add in the tomato paste and the fresh tomatoes…You can use as many teaspoons or tablespoons of paste or tomatoes as you wish.
- Add in the rice and stir. If the water that was added was not enough for the rice to boil add in 2 more cups. Stir and simmer until sauce has been absorbed.
- On my stove top it took about 20 minutes for this to cook…:)
