The weather has finally cooled down, and I headed straight for the kitchen to make this Moist Greek Cinnamon Cake. Yup, I started up the oven, and it was about time! And let’s be honest… the temperatures will probably shoot right back up in a few days because it is July and mid‑summer after all. But this little drop in heat was such a relief that I grabbed the opportunity and ran with it. Nothing like a surprise cool day to bring back baking season, even if it’s temporary.
So, I took out the ingredients and left them at room temp because you know me, I sometimes forget at least one thing in the fridge, and it’s usually the butter. As the batter started coming together, that first wave of cinnamon aroma hit me. My mom, aunt, grandmother, mother-in-law none of these ladies ever measured the ingredients; they eyeballed everything. A handful of this, a splash of that, and somehow their cakes always turned out perfect. I can’t do without my measuring spoons, cups, scales, and all that other stuff we need to bake. ufffff!!
Once the cake went into the oven, the whole house transformed. The cinnamon, the golden crust forming, the cinnamon scent that makes everyone simply wander into the kitchen asking, “What are you baking?”. When the cake was ready, I finally sliced into it; the crumb was soft, moist, and beautifully spiced, exactly what I wanted after a long stretch of summer heat.
This Moist Greek Cinnamon Cake is perfect with a cup of coffee, tea, or even a glass of cold milk. It’s one of those cakes you can enjoy in the morning, as an afternoon treat, or as a simple dessert after dinner. Andddd it stays moist for days!

Moist Greek Cinnamon Cake
Equipment
- 1 stand mixer
- 1 spatula
- 1 round baking pan
Ingredients
- 3 ¼ cups self-rising flour sift the flour
- 1 cup butter room temp
- 1 cup light brown sugar
- 4 eggs large
- 1 ½ tbsp cinnamon powder
- ¾ cup orange juice
- ⅓ cup brandy
Instructions
- Place the 1 cup butter and 1 cup light brown sugar in the mixer and beat until fluffy and creamy.
- Preheat oven to 180℃.
- Add the 4 eggs one at a time, then add the 1 ½ tbsp cinnamon powder and the ¾ cup orange juice. Continue to beat.
- Pour in the ⅓ cup brandy and gradually add the sifted 3 ¼ cups self-rising flour.
- Butter the baking pan.
- Pour the batter into the baking pan and spread evenly.
- Place the baking pan on the bottom rack and bake for 45 minutes, or until golden brown.
- Remove the cake from the oven and let it completely cool off before serving.
- Serve with a scoop of ice cream.
