Mini Spiral Cheese Pies

Hello, my dear foodie friends,

How are you?  I am still struggling a bit with my eyes and trying to limit my screen time to rest them as much as possible.  So, please bear with me if I don’t respond to your comments quickly. 🙂 The other day I shared my Mini Spinach Rolls, and today I’m back with their twisty, let’s say, cousin mini Spiral Cheese Pies. (Yes, I made them on the same day. What can I say? Sometimes the baking mood hits like a Greek thunderstorm, quite loud and fast. 🙂

So, there I was, rolling and tucking phyllo sheets for the mini spinach rolls. I noticed that I had some phyllo sheets left over, and what else but feta cheese? The feta cheese melted beautifully inside, the spirals puffed up golden and crisp and flaky, and my kitchen smelled like a little Greek village bakery. I added a few herbs and spices into the mix, dill (of course), parsley (just a little), and a pinch of nutmeg.  The cheese was salty, so there was no need to add any more, but the pepper was a must.

In Greek cuisine, there’s a huge variety of pies, which I don’t tackle.  I am thinking that it’s about time I give that Fish Cod pie a try.  It’s been ages, not sure how that’s going to turn out.  The next time I’m in the fish market, I will buy some cod and give it a go.

Here’s the funny thing about these pies: they’re supposed to be for sharing. You bake a batch, put them on the table, and let everyone ooh and ahh. Except… when they came out of the oven, I told myself, “Just one.” Then, “Maybe another, for quality control.” But this time, I was disciplined. I actually walked away and saved them for a friend (unlike I did with those pistachio cookies, which mysteriously vanished before they ever left my kitchen. hahahhahaha

These spirals are the kind of snack that works for everything: breakfast, lunch, meze, snack. They’re simple, crispy, cheesy, and gone in an instant.

Mini Spiral Cheese Pies

These cheese pies have a crispy, golden brown color with a cheesy feta filling. A few herbs and spices make this a delicious snack for lunch.
Prep Time 15 minutes
Cook Time 25 minutes

Servings 10 pieces

Ingredients
  

  • 1 cup feta cheese  crumbled
  • 1 egg
  • 6 phyllo sheets country style
  • ¼ cup olive oil
  • 3 tbsp dill fresh or dry
  • 1 tbsp parsley fresh or dry
  • 2 tbsp mint fresh or dry
  • salt Test out the feta before adding salt.
  • pepper
  • ½ tsp nutmeg

Instructions
 

  • Preheat the oven to 180℃. Grease a round oven pan with olive oil. Take one Phyllo sheet and lay it on a clean dough board or counter.
  • Spread about 2 cm of the filling onto the phyllo from one end to the other, but leave a bit of space at both ends.
  • Start slowly and tightly to roll from one end to the other until it forms a tube.
  • You can spiral it from the middle or line it up around the pan’s edge. Just brush with olive oil, bake for 25 minutes, and wait for that golden crunch color to appear.
