Mini Spiral Cheese Pies

These cheese pies have a crispy, golden brown color with a cheesy feta filling. A few herbs and spices make this a delicious snack for lunch.

- 1 cup feta cheese crumbled
- 1 egg
- 6 phyllo sheets country style
- ¼ cup olive oil
- 3 tbsp dill fresh or dry
- 1 tbsp parsley fresh or dry
- 2 tbsp mint fresh or dry
- salt Test out the feta before adding salt.

- ½ tsp nutmeg
Preheat the oven to 180℃. Grease a round oven pan with olive oil. Take one Phyllo sheet and lay it on a clean dough board or counter.
Spread about 2 cm of the filling onto the phyllo from one end to the other, but leave a bit of space at both ends.
Start slowly and tightly to roll from one end to the other until it forms a tube.
You can spiral it from the middle or line it up around the pan’s edge. Just brush with olive oil, bake for 25 minutes, and wait for that golden crunch color to appear.
