Hello there,
Did you ever have one of those days where nothing goes right? I am sure everyone has had one or more of those meltdown days. Well, yesterday was my day it started out with a bit of crying, and then frustration and then just back to crying. It was about everything and anything I could possibly think of. 🙁
Then from crying so much I brought on a headache 🙁 and top it off I had my weekly Dutch lesson..which by the way when I got there my meltdown continue to my teacher, who is such a sweet lady, she just sat there for about 10 minutes and let me just get everything out there and I thank her so much for that. It started early in the morning with the internet. My friend had come over in the morning to help me fill out a application form that needed to be dealt with on-line but the internet was just not working in my favor.
When I returned home, I had all my ingredients ready for me to cook and the oven wasn’t working, then the stove top wouldn’t start one thing after the other.. Need I say moreee?? What did I do you ask? I gave up! Yep, that’s exactly what I did I through my hands up in the air and just gave up. I took my dog and went for a long walk and when I came back everything was exactly the same as I had left it…absolutely nothing was working. So, I spent the day moping around the house and just feeling awful. 🙁
This morning I woke up feeling better the headache was gone so the day started out better…no crying, but I wasn’t sure what was going on with everything else. So, I went into the kitchen and everything was working ???? even the internet was back to normal. 🙂 Since I was not able to cook or bake yesterday I am posting a Lentil Soup recipe, which was actually one of the first recipe post’s I started my blog with last year….so please accept my apologises and since everything seems to back to normal today, I am back in the kitchen cooking and baking. 🙂

LENTIL SOUP (FAKES)
Ingredients
- 300 grams Lentil boiled
- 1 Carrot chopped
- 1 Onion chopped
- 1 Potato chopped
- 2 whole Garlic cloves
- 150 grams Bacon cut into small pieces
- 3 Daphne Leaves/Bay Leaves
- 2 teaspoons of Tomato Paste
- 2 Fresh tomatoes grated
- 1 Red Bell Pepper diced
- Salt
- Pepper
- 1/2 cup Olive Oil
Instructions
- Boil Lentil for at least 15 minutes and drain.
- In a large soup pan, add about 4 tablespoons of Olive Oil and sauté the Bacon.
- Add in Onion, Carrot, Potato, Bell Pepper, Garlic, and stir.
- Toss in the lentil and continue to stir, so that all is nicely combined.
- Add water, grated tomatoes, tomato paste, salt, pepper, 1/2 cup Olive Oil and Bay leaves, bring to a boil and let it simmer on low heat for about 1 hour.
I can relate to that meltdown feeling and I see that you are feeling better today, Good!

Sophie my friend, when days like that happen to me, and oh boy they do. The days when anyone asks, what is wrong, and the answer is nothing in general just everything in particular 🙂 BUT when those days happen, I know that on the other side of that is a HUGE blessing. The old evil one is just trying to get you off track so you will miss it 🙂 I am excited for your upcoming blessing!!! 🙂 🙂 Now back to the lecture at hand, I LOVE this recipe. I have made it before, sometimes minus the bay leaves because I don’t always have them handy but it is still delicious! If I don’t have the tomato paste I will use ketchup. I know gasp but I do it. Or diced tomatoes. Cause when I want some good ole lentil soup, I will do what I have to do 🙂 I will also sometimes throw in a bouillon cube, chicken of beef, doesn’t matter. It is always delicious! There is no better winter comfort food than a thick soup with crusty bread.
A second helping of this and I have a complete meal.
Our family favourite lentil soup is called Mulligatawny and uses a small apple in addition to carrot and chicken stock.
I will try your version too minus the bacon.
Ohh how interesting….would love to read your recipe. The bacon has been added to this recipe these past couple of years, the original Greek version has no bacon in it. 🙂 Would love to hear your feedback when you do make it. Thank you 🙂
