(sorry guys ummm I forgot to press publish yesterday. I just sat down to try to catch up with everyone’s post, comments, and I noticed mine was not posted. hehehe 🙂
I hope everyone is well. We are heading for a long weekend, Monday is a holiday in NL and I think in most countries in Europe if I am not mistaken. But not for meeee I am working on Monday and I don’t mind at all. I don’t mind because I have unemployed for so many years that I truly enjoy working. 🙂
When I was done with my morning lessons. I took a small break to rest, and watch the Rafa/Fed match 🙂 Don’t worry if you love tennis I won’t tell you who won. 🙂 I know Dee Dee from Invisible-no-more is watching the match, and some of my other friends. :0 I don’t want to spoil it for them.
When the match was over I was off to the kitchen. I haven’t made Quiche in such a long time, and it is long over due. I went ahead and sliced the Mushrooms and boiled the Broccoli last night. (saves prep time) The other ingredients just chopping and mixing. 🙂 I did not boil the Lasagna sheets, actually I never do, but If you are thinking of boiling the Lasagna sheets, it’s completely up to you. It’s basically a very simple recipe so give it a go and let me know what you think. 🙂
Ohhh, yes I forgot I have some exciting news!!! I have been invited to a Food Bloggers Event in Switzerland in September!!! It is going to be a lot of fun, can’t wait to meet other Food Bloggers from around the world. 🙂

INGREDIENTS:
10 Lasagna Sheets
1 cup Mushrooms (250 grams)
1 small Broccoli head
1/4 Olive Oil (3 to 4 tablespoons)
550 grams of Non Fat Milk (2 1/2 cups)
2 cups of Non Fat Greek Yogurt (500 grams)
2 tablespoons Corn Flour
1 Garlic Clove (optional)
Parsley
Celery
Parmesan Cheese
Pepper
PREPARATION:
Combine in a large casserole pan add all the ingredients except for the corn flour and yogurt. Simmer on low to medium heat.
Add yogurt into the corn flour with a bit of milk and mix. Continue by adding the remaining milk.
To assemble the Lasagna start by adding a layer of Mushroom Sauce, then add a layer of Lasagna Sheets. Pour the yogurt-corn flour mix over the Lasagna Sheets, then top off with Parmesan Cheese.
Pre-heat oven at 180 and bake for 1 1/2 hours.
