Happy Monday everyone!!
I hope the weekend was a good one for everyone. A brand new week has begun, and so much to get done. One thing I know I won’t be doing today is talking, 🙁 I lost my voice on Friday due to talking to much while tutoring. I know understand why my teachers/professors had a glass of water on their desk and sore throats.
I have a lovely blogger friend Ritu, and a good friend in Greece Frances who both teach younger children. Ritu’s blog is But I Smile Anyway, she is an exceptional writer and I absolutely adore her, her talent, sense of humor. Frances is a very good friend of mine and a fantastic human being, and has been teaching younger children for quite a number of years. I just wanted to say to both of these ladies, that I now understand just very little of what your job entails, and your students are very very lucky to have you as their teachers. 🙂 I only do this part time, and yet I lost my voice, but I am enjoying it. 🙂 (not losing my voice part) hehehe
Last Thursday was the start of the Carnival and TSIKNOPEMPTI which is also celebrated 11 days before ASH MONDAY or otherwise know was in Greece as CLEAN MONDAY (KATHARI DEYTERA). When we lived in Greece, we would celebrate the start of the three week carnival by going out that day/night. Since we have been living in NL tradition is not easy to celebrate. My hubby was working so I decided to celebrate TSIKNOPEMPTI late again, 🙂 by making my own little version of Greek Gyros, with some of my Sweet Paprika baked French Fries and baked Pita Breads. It is quite odd to celebrate on different days, but we need to keep celebrating to keep in touch with our traditions/cultures where ever we are on this planet.
It turned out quite good even without a normal oven. 🙂 (I have a micro/oven in this house I no no no like) 🙂

HOMEMADE GREEK GYROS & PITA BREADS
- 1 kilo Pork or Chicken
- 1 cup Olive Oil
- 1/2 cup Vegetable Oil
- 1/4 cup Oregano
- 1/4 cup Parsley
- 2 Tablespoons Mustard mild
- 2 Tablespoons Paprika sweet
- Onions diced
- Tomatoes sliced
- Pita Bread
- In a large bowl add the olive, vegetable oil, stir.
- Add in the oregano and mustard.
- continue with the paprika,
- and last but not least the parsley.
- Mix all the ingredients and pour over the meat.
- Cover with plastic wrap and place in the fridge overnight. Place one piece on top of the other and use skewers to hold the meat together. Place in a pre-heated oven at 180 and cook for 1 1/2 hours.
- I cut the pita breads into smaller pieces and sprinkled a bit of vegetable oil, and paprika. Baked them for about 10 minutes.
- Cut meat into smaller pieces, place on pita along with tzatziki, tomatoes, onions and some of those delicious baked french fries.
