Hello!! 🙂 Ok, so I wasn’t really sure what to post today because I had so many different recipes in mind but not many ingredients in the fridge. Buttttt I did have some tomatoes and rice on hand and made this simple, seriously simple and fast dish for lunch. If you have never come across this type of recipe for rice you should absolutely try it out.
My diet plan for lunch today was boiled chicken again 🙁 but I have been eating chicken broiled, boiled, roasted, for almost the past 2 weeks, so enough with the chicken and on to something a bit more tastier. I cheat on my diet when the weekend comes around, buttt when I mean cheating no junk food!! but food with a bit more taste and so this rice and tomato dish at least to me will seem like I will be eating a slice of pizzaaaa..:) Yumm Yummmy
GREEK TOMATO & RICE RECIPE (NTOMATORIZO)
- 6 large Tomatoes grated
- 1 tablespoon Tomato Paste
- 1 large Onion diced
- 1/4 cup Olive Oil
- 1 1/2 cup White Long Grain Rice or Basmati Rice
- 2 tablespoon Sugar
- Grate Tomatoes
- Dice Onion
- In a large sauce pan pour in the Olive Oil and the diced onions, and sauté. Once onions are ready add in the tomatoes and the tomato paste, stir. Add in the rice and about 1 cup of water, (this all depends on what type of rice you will be usinsalt, pepper & sugar. Let this boil until the rice has absorbed the tomato juice and water.
