Fluffy Greek Lemon Cake
Equipment
- 1 stand or hand mixer
- 1 silicone round bundt mold
- 1 spatoula
- 1 lemon squeezer
- 1 citrus zester
Ingredients
- 3 ½ cups all-purpose flour sifted
- 1 cup butter room temperature
- 1 cup sugar
- 4 eggs
- 1 ½ tbsp baking powder
- 1 tsp salt
- ¾ cups greek yogurt
- ¼ cup lemon juice
- lemon zest from one lemon
- for the glaze
- 1 cup water
- 2 tbsp lemon juice
- 1 ¾ cup icing sugar
Instructions
- Preheat the oven to 180℃
- In a large bowl, sift together 3 ½ cups all-purpose flour, the 1 ½ tbsp baking powder and the 1 tsp salt.
- Add the 1 cup butter, and the 1 cup sugar to the mixing bowl. Mix on low speed and gradually up the speed to medium speed.
- Add in the 4 eggs, one at a time.
- Slowly add the flour mixture into the butter mix, beat until combined. Then add the ¾ cups greek yogurt, ¼ cup lemon juice, and the lemon zest.
- Lightly grease the silicone pan with a little butter. Pour the batter into the silicone baking pan.
- Bake for 40 minutes or until golden brown. Test the cake for readiness by inserting a cake tester or toothpick in the center of the cake.
- For the glaze, just add the 1 cup water, 2 tbsp lemon juice, 1 ¾ cup icing sugar, a mixing bowl, and beat until combined. Wait for the cake to cool off before pouring the glaze.
