Equipment

  • 1 stand or hand mixer
  • 1 silicone round bundt mold
  • 1 spatoula
  • 1 lemon squeezer
  • 1 citrus zester

Ingredients
  

  • 3 ½ cups all-purpose flour sifted
  • 1 cup butter room temperature
  • 1 cup sugar
  • 4 eggs
  • 1 ½ tbsp baking powder
  • 1 tsp salt
  • ¾ cups greek yogurt
  • ¼ cup lemon juice
  • lemon zest from one lemon
  • for the glaze
  • 1 cup water
  • 2 tbsp lemon juice
  • 1 ¾ cup icing sugar

Instructions
 

  • Preheat the oven to 180℃
  • In a large bowl, sift together 3 ½ cups all-purpose flour, the 1 ½ tbsp baking powder and the 1 tsp salt.
  • Add the 1 cup butter, and the 1 cup sugar to the mixing bowl. Mix on low speed and gradually up the speed to medium speed.
  • Add in the 4 eggs, one at a time.
  • Slowly add the flour mixture into the butter mix, beat until combined. Then add the ¾ cups greek yogurt, ¼ cup lemon juice, and the lemon zest.
  • Lightly grease the silicone pan with a little butter. Pour the batter into the silicone baking pan.
  • Bake for 40 minutes or until golden brown. Test the cake for readiness by inserting a cake tester or toothpick in the center of the cake.
  • For the glaze, just add the 1 cup water, 2 tbsp lemon juice, 1 ¾ cup icing sugar, a mixing bowl, and beat until combined. Wait for the cake to cool off before pouring the glaze.
