Today I’m sharing three of my favorite quick Greek recipes. Each one brings something different to the table, but together they create a beautiful Mediterranean spread that feels both simple and special.

Greek. Horta is the most humble dish on this list, but it’s also the most traditional. Greeks have been eating boiled greens for generations, wild greens, spinach, vlita, whatever is in season. A quick boil, a drizzle of olive oil, a squeeze of lemon, and a pinch of salt. That’s it.
