Eggs, Tomatoes, and Greek Yogurt Breakfast Omelette

I hope everyone is well.  So, guys I wanted to let you know that this post, and a few of my upcoming posts have been pre-scheduled on my calendar.  I have so many other things to do at the moment, that It would have been impossible for me to post them on my regular week days. And soooo since  today is officially the first day of Summer I would like to wish everyone a  WONDERFUL SUMMER!!!.. 🙂

Breakfast, the most important meal of the day. Seriously,  I am curious to find out how many of you do eat breakfast??  I hope most of you do 🙂 .  Well, if you do eat breakfast here is a smart twist for your Omelette.  Try adding Low Fat Greek Yogurt into your eggs before whisking. Some of you might think right about now Yogurt???!!!  no wayyyy, absolutely not!  But in all seriousness you need to try out this recipe, trust me it is absolutely amazing, and ohhh the best part is that it is soooo simple to make.

Don’t let the photo fool you, this was actually an Omelette, I just swished it around a bit more than I was suppose too.  I had some leftover Croissants from the previous day, so I just made an Omelette Spread. While making this Omelette I was listening too Mark Morrison, “Return of the Mack”   &  Maroon 5  “Sugar”  🙂  Lot of swishing 🙂

INGREDIENTS:

5 fresh Tomatoes, (grated)

3 or 4 medium size Eggs

1 cup Low Fat Greek Yogurt

Oregano

Salt & Pepper

Olive Oil

Sugar

 

PREPARATION:

Add Olive Oil and Tomatoes into a large sauce and simmer for 15 minutes.

One tablespoon of Oregano, is more than enough.

Add Yogurt and Sugar into the eggs.

Continue by adding Salt and Pepper and whisk.

Simple recipe for a quick breakfast or lunch and even dinner if you love to try new things.  🙂
