This might seem like an ordinary scrambled egg breakfast recipe but it’s not. There’s more to it than just eggs, there’s a little of this and a lot of that. Of course, the ingredients play a huge role but I mainly mean passion! Every meal I prepare, I do it with passion. I look for the best quality ingredients, I might spend a bit more but it is definitely worth it. You might have noticed that even the photos that I post are not perfect, but I shoot them with passion. Oh!! and believe me I am definitely not a Perfectionist, a while back someone said that “I am unique”. I wasn’t sure how to react to that comment, in a happy or frustrated way. 🙂
For most people Breakfast is the most important meal of the day but for others, it was and maybe still is not. When we first moved backed to Greece I was surprised that most Greek people just had coffee for breakfast. Shocking!! Yes, I agree. I remember hanging out with a friend early one morning, our morning Sociology course (Law) was going to start later that morning and so we met early to catch up on things. We met at this really nice Cafe I ordered coffee and a piece of Tyropita (cheese pie) she only ordered coffee, and so this is how our short conversation went:
Me: You’re not having breakfast?
Friend: breakfast mbaaaaaa
Me: huh?? what? seriously? 🙂
Of course, eating habits in Greece have changed, and breakfast has become a very important part of the daily diet. For instance Fruit Bowls, Yogurt with Honey, Cereal, Smoothies, Eggs, Cheese pies, Custard pies, Toast, Pancakes, Waffles, etc. So, here is a special Breakfast, Brunch, or even Dinner recipe that is so tasty, and it so easy and quick to prepare. Ohh but there are still a few of those who only have black coffee!!

Egg and Vegetable Breakfast Recipe
Ingredients
- 6 eggs
- 1 red bell pepper chopped
- 1 leek diced
- 3 cups broccolli fresh or frozen
- ½ cup parmesan
- 4 cups potatoes sliced
- ¼ cup olive oil
- pepper
- ½ cup mushrooms optional
- 2 tbsp balsamic vinegar
Instructions
- Slice and wash potatoes. Preheat oven place broccoli into a baking pan and pour 3 tbsps of olive oil cook until tender. Set broccoli aside to cool off.
- chop red pepper bell
- In a saute pan add-in diced leek with broccoli, stir for 5 minutes and then add red bell pepper
- continue by adding potatoes. Stir and saute for 5 minutes.
- Addin parmesan cheese, eggs, pepper, balsamic vinegar. and the left over olive oil
- Continue to stir the mix like scrambled eggs. Once it is ready serve
